I thought of something in a match on WarOfTitans when the host quit:
What about a dialog that asks whether or not you want to replace current players with an AI? If you select yes, an AI is put in place of the other players and inherets all their stuff. If you select no, you are returned to the main menu.

MP Game saving would be awesome... I don't mind long games, but anything over an hour can be problematic.
