In the opens I have enabled 'full screen' mode, but the game still plays in a a little window on my laptop.
Any ideas?

Try alt-enter ?

I still don't understand why would anybody want fullscreen, when alt+t with custom --resolution is so much more convenient.

Alt/enter should toggle you in and out of full screen.
If this is not working try to reset the keymapping start game options/keymapping then click the trash icon it should reset all defaults so alt/enter starts working.
If that fails I have no idea.
