Can the timer be toggled with a Mac? (Snow Leopard)

Yes.
Use cheats.
In game press Shift+Backspace to activate cheats, then use cheat "time toggle".

Thanks. Doing that gives me a list of function keys to use and the Imac doesn't have function keys.

Also, When the list of cheats appears it scrolls by so quickly that I can't read anything: Is it possible to control the scroll speed and just go down the list line by line?

To enter that cheat, you need to press Enter and then type it.
If you forget to press Enter, you eventualy type M which is used for showing shortcuts.
You can use Pause/Break button to pause and read it.

Macs don't have a Pause/Break key. They do have a ` key, though, which will allow you to see messages that have scrolled off the screen.

But even by opening whole console, you won't be able to see everything.
An instead of Pause/Break, you can use Esc.
And if Macs have no Esc key, then screw Macs!
