I know that the textures look different on the trunk version, but is there anything else that has changed as well?
Maybe AI, templates, structures you can build, or even the pulse laser traveling slower than it does now?

Nope. The terrain is currently the only difference. Some balance changes are going to hit trunk pretty soon, though.
By the way, "trunk vs regular" is a weird way to put it. Maybe "trunk vs stable" or "2.3 vs 2.2".

Trunk (also known as svn ) is the development version, full of exciting new features and bugs.
Trunk vs Release or Trunk vs (hopefully) Stable is a good way to look at it.
